Our small company oil mill is made up of a latest generation processing system (Mori-Tem Toscana Enologica Mori) where the main objective is cleanliness and the absence of oxygen during processing which allows us to obtain a high quality product. The plant is divided into:
OUTDOOR AREA which includes: - HOPPER / DEBRAMIFIER / DEFEATHER where the olives arriving from our lands are first cleaned of any branches, soil or leaves - WASHING MACHINE / DRYER the olives are washed and dried before pressing olives, - DRYER are transformed into pulp and then pass through a refrigeration pipe to lower the temperature of the paste before reaching the kneaders
INTERNAL AREA which includes: - VERTICAL BRANCHES / DECANTER where the paste is kneaded for about 10/15min in the absence of oxygen and at low temperatures - SEPARATOR / FILTER all our oil is filtered immediately after extraction.
STORAGE Our oil is stored in silos under nitrogen in an underground room with a constant temperature of around 15°C.
