Our company oil mill consists of a state-of-the-art processing system (Mori-Tem Toscana Enologica Mori) whose main objective is COLD EXTRACTION, constant cleaning, and the absence of oxygen during processing, which allows us to obtain a product of high quality.
The plant is divided into:
EXTERNAL AREA which includes
- HOPPER/DEBRANCHER/DEFOLIATOR where the olives arriving from our fields are first cleaned of any branches, soil, or leaves
- WASHER/DRYER the olives are washed and dried before crushing
- CRUSHING by blades, the olives are transformed into pulp and then pass through a cooling pipe to lower the temperature of the paste before reaching the malaxers
INTERNAL AREA which includes
- VERTICAL MALAXERS where the paste is kneaded for about 10/15 minutes in the absence of oxygen and at low temperatures
- DECANTER where the paste ready for extraction, by centrifugal force, is separated obtaining oil and wet pomace
- SEPARATOR by centrifugal force divides and removes all the vegetation water particles from the oil coming from the decanter
- FILTER all our oil is filtered immediately after extraction
STORAGE
Our oil is stored in silos under nitrogen in a room with a constant temperature of around 15°C.
